Deep fried chicken pieces tossed in spicy sauce.

CHICKEN HONG KONG

Ingredients

400 grams boneless chicken breasts, cut into cubes
1 tablespoon oil + for deep-frying
Salt to taste
White pepper powder to taste
3 teaspoons cornstarch
1 egg
2 spring onions with greens
2-3 dried red chillies
1 inch ginger, sliced
1 tablespoon chopped garlic
½ cup chicken stock
1 tablespoon red chilli paste
1 tablespoon red chilli sauce
1 tablespoon soy sauce
¼ cup + 1 tablespoon chicken stock
1 teaspoon sugar
1 teaspoon vinegar

Method

1. Heat sufficient oil in a pan.
2. Take chicken in a bowl. Add salt, pepper powder and 2 teaspoons cornstarch.
3. Break an egg in another bowl and whisk well. Add half egg to the chicken mixture and mix well.
4. Deep-fry chicken in hot oil till golden and crisp. Drain on absorbent paper.
5. Halve spring onion bulbs reserving greens and separate layers. Diagonally slice dried red chillies and discard seeds.
6. To prepare sauce, heat 1 tablespoon oil in a non-stick pan. Add ginger and sauté for 30 seconds. Add garlic, mix and sauté on high heat.
7. Add sliced dried red chillies, red chilli paste, red chilli sauce, soy sauce, chicken stock and spring onion bulbs, stir well and sauté for a minute.
8. Add fried chicken, salt, pepper powder, sugar and vinegar and toss to mix.
9. Dissolve remaining cornstarch in1 tablespoon chicken stock. Add to the sauce, mix and cook on low heat for a minute.
10. Roughly chop spring onion greens, add to sauce reserving some for garnishing and mix well.
11. Serve hot garnished with chopped spring onion greens.

Cooking Time: 12-15 minutes
