Cilantro and Chilli Marinated Fish Skewers | Sanjeev Kapoor Khazana

Chunks of fish marinated in a herby coriander, green chilli marinade, mustard paste and lemon juice marinade and grilled.

CILANTRO AND CHILLI MARINATED FISH SKEWERS WITH JALAPENO MAYO

Ingredients

3-4 green chillies, chopped
½ cup chopped fresh cilantro
2 boneless fish fillets, cut into fingers
1 tablespoon chopped garlic
1 teaspoon mustard paste
1¼ tablespoons lemon juice
Salt to taste
1 tablespoon oil + for grilling
Zest of 1 lemon
¼ cup mayonnaise
2-3 jalapenos, finely chopped
1 small red bell pepper, chopped

Method

1. Blend together garlic, green chillies, mustard paste, cilantro, 1 tablespoon lemon juice, salt and oil into a fine paste. Transfer in a bowl. Add lemon zest and mix well. Add fish fingers, mix well and refrigerate to marinate for ½ hour.
2. To make jalapeno mayo, combine mayonnaise, jalapenos, remaining lemon juice, bell peppers and salt in a bowl and mix well.
3. Insert one marinated fish finger onto individual 6 inch skewers.
4. Heat some oil in a non-stick grill pan. Place the skewers in it and grill till evenly done from all sides.
5. Serve hot with jalapeno mayo and lemon wedges.

Preparation Time: 30-40 minutes
Cooking Time: 8-10 minutes
