Green Pea Mint Soup | Sanjeev Kapoor Khazana

A refreshing soup and appetizer for your parties and get-togethers.

GREEN PEA MINT SOUP

Ingredients

2 cups fresh green peas
½ cup mint leaves
2 tsps butter
1 tbsp chopped garlic
1 small onion, chopped
2-3 fresh thyme sprigs
Salt to taste
4 cups vegetable stock + to adjust consistency
Black pepper powder to taste
Fresh cream for garnish

Method

1. Heat butter in a non-stick wok, let it melt. Add 1 tbsp chopped garlic and sauté till golden brown.
2. Add 1 small onion, chopped and sauté till translucent. Add 2-3 fresh thyme sprigs, green peas and salt, mix well.
3. Add 4 cups vegetable stock and let it come to a boil. Reduce the heat and cook till the peas are soft and cooked. Discard the thyme sprigs.
4. Take it off the heat, add mint leaves and allow the mixture to cool slightly. Transfer mixture in a blender jar and blend to a fine puree.
5. Add the puree into the same pan and place it back on heat. Add stock to adjust the consistency.
6. Add black pepper powder and mix well. Let the soup come to a boil.
7. Garnish with fresh cream and serve hot.
