Pineapple Upside Down Cake | Sanjeev Kapoor Khazana

This is how you make a perfect pineapple upside down.

PINEAPPLE UPSIDE DOWN CAKE

Ingredients

100 gram tinned pineapple roundels
1 cup refined flour (maida) + for dusting
2 eggs
1 cup powdered sugar
100 grams butter + for greasing
1 teaspoon baking powder
2-3 tablespoons milk
Brown sugar for sprinkling
Tinned cherries as required

Method

1. Preheat oven to 180̊ C.
2. Break eggs in a bowl and whisk using an electric beater till light and fluffy. Add powdered sugar gradually and whisk. Add butter and whisk well.
3. Sift together flour and baking powder and fold well. Add milk and mix well to make a semi-thick batter.
4. Grease a loaf tin with some butter and dust with some flour. Sprinkle some brown sugar, place the pineapple roundels and place one cherry in the center of each roundel.
5. Again sprinkle some brown sugar, pour the batter, level it out and tap.
6. Put the tin on a baking tray. Put the tray into the preheated oven and bake for 25-30 minutes. Remove from oven, cool and demould.
7. Slice and serve.
