Creamy Cheesy Orzotto

Ingredients

4 cups vegetable broth
2 tablespoons olive oil
2 tablespoons chopped fresh rosemary
1 shallot, sliced thin
1 1/2 cups orzo
1/4 teaspoon crushed red pepper flakes
4 cloves garlic, minced
1/2 cup white wine
1/4 cup heavy cream
1 cup shredded mozzarella
1/2 cup mascarpone
4 ounces goat cheese
1 cup sun-dried tomatoes, diced
2 cups chopped kale
Kosher salt and freshly ground black pepper
1/2 cup chopped fresh parsley

Directions

Heat the broth in a small saucepan and keep warm.

Heat the oil in a saucepan over medium heat. Add the rosemary and shallot to the oil, then cook for a minute. Add the orzo, red pepper flakes and garlic and cook, stirring, for an additional 1 to 2 minutes. Deglaze with the wine and add the warm broth. Allow the broth to come to a simmer, then cook for 5 minutes, stirring occasionally.

Stir in the cream, cheeses, sun-dried tomatoes and kale. Cook until the kale wilts and the sauce is thick and creamy, an additional 3 to 4 minutes. Taste and season with salt and pepper.

Garnish with the parsley and serve.
