Spicy Cabbage Pickle | Sanjeev Kapoor Khazana

Delicious spicy pickle made using chinese cabbage.

SPICY CABBAGE PICKLE

Ingredients

1 head Chinese cabbage
½ cup sea salt
3 spring onion with greens
4 red radishes
1 inch ginger
7-9 garlic cloves
1 tablespoon red chilli paste
1 teaspoon vinegar
1½ teaspoons red chilli powder
½ teaspoon sugar
1 tablespoon sesame oil
1 tablespoon fish sauce
1 tablespoon roasted sesame seeds

Method

1. Dissolve sea salt in 3 cups water.
2. Roughly chop cabbage and spring onion greens. Thinly slice radish, ginger, spring onion bulbs and garlic. Add the chopped and sliced vegetables to the sea salt water, mix well and soak for 4-5 hours. Strain in another bowl.
3. Combine red chilli paste, vinegar, chilli powder, sugar, sesame oil and fish sauce in a bowl and whisk well. Add the vegetables and sesame seeds and mix well. Transfer in a jar and store for 3-4 days.
4. Serve.
