Stir Fried Vegetables with Fried Basil | Sanjeev Kapoor Khazana

Fresh cut vegetables stir fried with mild spices and fried basil leaves

STIR FRIED VEGETABLES WITH FRIED BASIL

Ingredients

6-7 baby corn, sliced
1 medium red bell pepper, cut into 1 inch pieces
1 medium cucumber, peeled, deseeded and sliced
4-5 fried basil leaves + for garnishing
1 tablespoon oil
2 teaspoons vinegar
½ cup dried shiitake mushrooms, soaked
1 cup tinned water chestnuts
1 tablespoon chopped garlic
1 medium onion, sliced
1 tablespoon soy sauce
Salt to taste
1 teaspoon brown sugar
Crushed black peppercorns to taste
½ cup cashewnuts

Method

1. Heat oil in a non-stick wok.
2. Discard stems of mushrooms and roughly chop. Halve water chestnuts.
3. Add garlic to the wok and sauté till golden. Add onion and sauté till golden.
4. Add baby corn and toss to mix. Add halved water chestnuts, toss to mix and cook for a minute.
5. Add chopped mushrooms and toss to mix. Add red bell pepper and cucumber and toss to mix. Add soy sauce, salt, brown sugar, crushed peppercorns, cashewnuts, toss to mix and cook for a minute.
6. Add saltand broken fried basil leaves and toss to mix.
7. Serve hot garnished with fried basil leaves.

Preparation Time: 8-10 minutes
Cooking Time: 10-12 minutes
