Turkish KOFTE & PIDE Kebab: Perfect Iftar Meal for Ramadan. On our first iftar I bring two all time favorites to one dish: Ramadan pide and Turkish kofte! We call this "Kfteli Pide" meaning kfte with pide base. It is similar to iskender and perfect to use any leftover breads or pides. But I'll be using fresh pide that will make as well.

Ingredients for Kofte Mix:
1 medium size onion
500gr. beef or mix of beef and lamb
1 tsp each black pepper, paprika, cumin
1+1/2 tsp salt
1/2 tsp baking soda
3/4 cup bread crumbs
about 1/3 cup cold water

For the Ramadan and small pide dough:
First mix:
1/2 cup lukewarm water
20gr. fresh yeast or 1 tbsp dry active yeast
1 tbsp sugar after 5 minutes
1/2 cup lukewarm milk + 3/4 cup warm water
5 cups bread or all-purpose flour
1-2 cups whole wheat flour (its optional, you can use only all-purpose if you prefer)
2+1/2 tsp salt
2 tbsp olive oil to get the dough
For the egg wash:
1 egg yolk
2 tbsp milk or yogurt
2 tbsp olive oil
sesame and nigella seeds
