1. In a medium saucepan, bring 3 cups water to a boil. Remove from heat and stir in rice. Cover and allow to sit for 5 minutes. 2. In a small bowl, mix together soy sauce and water. Set aside. 3. Meanwhile in a large skillet or wok, melt butter. Add onions and cook until translucent. With a spatula, shift onions to the outside edge of the wok. 4. Add eggs to the wok. Cook until slightly browned. 5. Add rice to the wok. Stir to combine all ingredients and cook for 5 minutes. 6. Stir in frozen vegetables and soy sauce mixture.
