1. put soya sauce, sugar, cornflour and lemon rind in a large bowl. 2. add chicken, coat with sauce. 3. leave 1 hour. 4. drain chicken. 5. fry both sides in oil. 6. add ginger, whole tin of pineapple and water. 7. simmer gently 1 hour. 8. serve with rice. ---------------------------------------------------------------------------
