Sausage Stuffed Potatoes


1. Preheat oven to 400°F.

2. Without peeling potatoes, boil for 10 minutes. Drain and peel. Using teaspoon, scoop out a deep hole for stuffing.

3. In medium bowl, add skinned sausage, bread, 1 tablespoon of the butter, parsley, stock and egg yolk. Mix together well and carefully stuff into potatoes.

4. Assemble potatoes in greased baking dish, dot with butter, sprinkle with salt and pepper and bake 15 minutes.

5. Serve hot.
