1. Heat butter in frying pan and fry onion, green pepper, celery and mushrooms until tender. 2. Add tomatoes, salt and pepper. 3. Simmer slowly for 10 minutes. 4. Stir in 2 cups cooked rice. 5. Turn into buttered 2 quart casserole. 6. Bake in 375 degree oven for 25 minutes, or until bubbling. 7.
