1. Slice green pepper and onion. Chop garlic. 2. Preheat large saute pan on medium high 2-3 minutes. Season both sides of chicken with 1 teaspoon Italian Seasoning, 1/4 teaspoon salt, and pepper. 3. Place oil in pan, then add chicken. Cook 1-2 minutes on each side or until golden. Stir in peppers, onions, garlic, and mushrooms. Cook 2-3 minutes or until onions begin to soften. 4. Stir in remaining ingredients, including diced tomatoes, 1 teaspoon Italian Seasoning, and 1/4 teaspoon salt. Reduce heat to medium-low and cover. Cook and stir 12-15 minutes, turning chicken occasionally, or until chicken is 165 degrees F.
