1. Combine the walnuts and orange rind in a bowl. Set aside. 2. In a saucepan, combine the cream and honey. Heat over a medium heat, bring to boil, reduce heat and cook for 20 minutes or until it reaches 121°C (firm ball stage) on a sugar thermometer. 3. Pour the honey mixture over the walnuts, stir to combine. 4. Place tablespoonfuls on a lightly oiled oven tray. 5. Refrigerate until set.
