1938 Date Sandwich (Date Squares) Recipe | Glen And Friends Cooking

This 1938 Date Sandwich (Date Squares) Recipe has always been a staple on our holiday dessert trays. Dates, Brown Sugar, and Oats!
Ingredients:
Filling:
500g (1 pound) dates, pitted and chopped
375 mL (1½ cups) water
5 mL (1 tsp) butter
110g (125 mL / ½ cup) packed brown sugar
5 - 10 mL (1-2 tsp) pure vanilla extract

Crust:
425 mL (1¾ cups) large flake rolled oats
280g (500 mL / 2 cups) all purpose flour
225g (250 mL / 1 cup) packed brown sugar
5 mL (1 tsp) baking soda
Pinch of salt
180g (175 mL / ¾ cup) cold butter



Method:
Preheat oven to 180ºC (350ºF).
In a small pot bring water, brown sugar, dates, and butter to a boil.
Stir and boil for 1-2 minutes, then remove from heat and let cool slightly.
In a food processor, mix together; rolled oats, flour, brown sugar, soda, salt, and butter.
Process to a fine mix.
Pour ½ of the oat mix into a 9x9” baking pan and pat down firmly.
Stir the vanilla into the slightly cooled date mix, and pour overtop the oat mix ‘crust’.
Evenly distribute the remaining oat crust overtop the date mixture and press down lightly.
Bake for 35-45 minutes.
Allow to cool before slicing.
