Aam Panna, a quintessential summer beverage, is cool and refreshing for the taste buds.

AAM PANNA (KAIRI PANHA)

Ingredients

500 grams raw mangoes
600 grams sugar
1 tablespoon liquid glucose
Four pinches of green cardamom power
Salt to taste
Ice cubes as required

Method

1. Pressure cook raw mangoes alongwith 4-5 cups water till 3 whistles are released. Open the lid when the excess air is completely released.
2. Peel and deseed the cooked raw mangoes and blend the flesh into smooth mixture.
3. Heat sugar in a deep non-stick pan. Add 300 ml water, mix and cook till sugar melts and the mixture boils.
4. Add liquid glucose to sugar syrup and mix till well blended. Add raw mango pulp, mix and cook till the mixture boils. Switch off heat and cool.
5. To prepare one portion, put one pinch of cardamom powder, salt and few ice cubes in a serving glass. Put 3-4 tablespoons raw mango-sugar mixture, add few ice cubes and pour water filling ¾ of it, mix and serve chilled.
