Continuing with Muslim theme month, I will show you an amazing braised eggplant with rice dish. Hong shao qie zi gai fan 红烧茄子盖饭 is eggplant braised in soya sauce and served over rice. Gai fan 盖饭 means covered rice. Usually, the food is served on top of rice, but in this case, they put it beside the rice. Braised eggplant and rice makes a great lunch.
