In a bowl add potato cubes, salt, turmeric powder and mix well. Let it rest for 10-15 mins.2. In a pan heat oil and add marinated potatoes. Cook for 5-6 mins or until potatoes are half done. set aside.Directions for Fried Eggs Preparation:3. In another bowl add boiled eggs and place cuts on them with knife. Add salt, turmeric powder, red chili powder and mix well. let it rest for 10-15 mins.4. In a pan heat oil and add marinated eggs, cook for 1-2 mins. Set aside.Directions for Aloo Anda Curry Preparation:1. In a pot heat oil and add black cardamom, green cardamom, cinnamon sticks, cumin seeds, curry leaves and cook for a minute.2. Add onion and cook until translucent. Add ginger garlic paste and cook for a minute.3. Add tomatoes and cook until tomatoes get soft. Add green chilies and mix well.4. Now add yogurt and cook for a minute. Add salt, red chili powder, turmeric powder, coriander powder and cook until oil separates.5. Add 1 cup of water and bring it to a simmer.6. Add fried potatoes and cover and cook until potatoes are fully done.7. Add fried eggs, 1 cup of water and cook for 1-2 minutes.8. Garnish with green coriander and serve.
