Aloo Kulcha/Amritsari Kulcha/Stuffed Kulcha

Ingredients for Kulcha Dough:
Water (lukewarm) ½ cup
Milk (lukewarm) ¼ cup
Yogurt ½ cup
Sugar 2 tbsp
Oil 2 tbsp
All-purpose flour 4 cups
Baking powder 1 tsp
Baking soda ¼ tsp
Salt 1 tsp

Ingredients for Aloo Filling:
Potatoes (boiled & grated) ½ kg
Green chilies (chopped) 1 tbsp
Salt 1 tsp
Red chili powder 1 ½ tsp
Garam masala ½ tsp
Chaat masala ½ tbsp
Coriander (crushed) 1 tbsp
Fresh coriander (chopped) 2 tbsp

Ingredients for Kulcha:
Dough
Aloo filling as required
Salted water (water ½ cup + salt 1 tsp)
Water (for brushing)
Red chili powder as required
Coriander (crushed) as required
Green Coriander (chopped) as required

Salsa Chutney Preparation:
Potatoes (boiled & cubes) 1 cup
Onion (chopped) 1/2 cup
Tamarind sauce 1 cup
Green coriander (chopped) 2 tbsp
Green chilies (chopped) 1 tbsp
Mint leaves 20-25 leaves 2:56
black salt 1 tsp
Cumin powder 1 tsp
Tatri a pinch
Water as required

Directions for Kulcha Dough:
1. In a large bowl, add warm water, warm milk, yogurt, sugar and oil, mix well until the sugar dissolves.
2. Using a sieve, sift the dry ingredients together in the water milk mixture and combine well to form a smooth dough.
3. Apply some oil over the dough and cover it with a damp cloth.
4. Rest the dough in a warm place for at least an hour, after the rest, knead the dough once again and divide into 6 equal size dough balls. Cover the dough balls with damp cloth and rest them for at least half hour.
Directions for Aloo Filling:
5. In a bowl, add potatoes, green chilies, salt, red chili powder, garam masala, chaat masala, coriander crushed, green coriander and mix well. Your potato filling is ready.
Directions for Kulcha:
6. Take a dough ball, flatten it with your hands. Place a small portion of aloo mixture in the center and seal the edges forming the shape of a ball again.
7. Roll in the form of a round disc.
8. Brush water on top and top with red chili powder, crushed and chopped coriander.
9. Sprinkle salt water on a preheated griddle and place kulcha on it. Invert the griddle over flame and let it cook until golden and crispy.
10. Remove the kulcha from griddle and brush butter on it. Your Amritsari Kulcha is ready. Set aside.
Directions for Salsa Chutney Preparation:
11. In a bowl add potatoes, onion, tamarind sauce, green coriander, green chilies, mint leaves, black salt, tatri, water and mix well. Your Salsa Chutney is ready.
12. Serve with Amritsari Kulcha and enjoy.

Cooking Time: 10-12 mins
