This Apple and Ginger Cake Recipe is so moist and delicious! This will soon become a family favourite sheet pan cake recipe.Ingredients:¾ cup (175 mL) butter, at room temperature1 cup (250 mL) brown sugar3 eggs1 cup (250 mL) all purpose flour1 Tbsp (15 mL) baking powder1 tsp (5 mL) ground cinnamon1 1/2 tsp (7 mL) ground gingerzest from 1 lemon3 apples, peeled1 Tbsp (15 mL) Demerara sugarMethod:Preheat oven to 350ºF (180ºC). Grease and line a 8x8” baking pan.Mix together flour, baking powder and spicesCream together butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Fold dry into butter mixture, add lemon zest, and 1 chopped apple and mix into batter.Fill prepared pan, smoothing top with a spatula. Bake for 10 mins. Remove from oven, and arrange sliced apples over batter. Sprinkle with demerara sugar, and bake for another 20-25 mins, or until a skewer inserted comes out clean.
