let's make aquafaba or vegan meringue in the hot for food test kitchen! The lemon meringue pie was actually still edible and not terrible, but it didn't set. The lemon curd was nearly perfect, I used a pre-made / store bought gluten-free pie crust and it totally became tough and that's why I couldn't cut through it. Then the meringue was baked for about 30 mins but not left to set in the fridge afterward long enough. I also added cream of tartar to the whipped meringue before topping it to the pie. So it's close to being a good recipe, but we'll have to test it out again to get the set and bake times right.
