BANARASI CHUTNEY WALA PANEER
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4

Ingredients
For Chutney
1-2 tbsp Oil,
1 tbsp Ghee,
2 medium Onion, sliced,
1 inch Ginger (peeled & roughly chopped)
Salt to taste,
1 cup Coriander leaves, roughly chopped,
cup Mint leaves, roughly chopped,
4-5 no. Cashew Nuts,
4 no. Green chillies (less spicy & roughly chopped)
1 medium Tomato, roughly diced,

For Frying Paneer
1-2 tbsp Oil,
1 tbsp Ghee,
500 gm fresh Paneer, diced,

For Soaking
cup Water,
Fried Paneer,

For Curd Mixture
1 cup Curd, beaten,
tsp Degi red chili powder,
tsp Turmeric powder,
tsp Coriander powder,

For Chutney Wala Paneer
Remaining excess oil,
A pinch of asafoetida,
2-3 no. Cloves,
5-6 no. Black peppercorns,
2 no. Green cardamom,
tsp Fennel seeds,
tsp Cumin seeds,
tsp dry Fenugreek seeds,
1 no. dry Red chili,
Prepared Curd Mixture,
Prepared Chutney,
Salt to taste,
tsp Sugar,
1 tsp Black peppercorns, crushed,
tsp dry Mango powder,
2-3 tbsp Fresh cream (for finishing)
Roasted Nuts,
fried Paneer,
2 tbsp Fresh cream,

For Roasting Nuts
1 tbsp Ghee,
7-8 no. Raisins,
7-8 no. Cashew Nuts,

For Garnish
Pomegranate pearls,
Fresh cream,
Coriander sprig,

Process
For Chutney
In a pan, add oil, ghee, once it's hot, add onions, salt to taste, ginger and saute it well until translucent.
Transfer it to the mixer grinder jar, add coriander leaves, mint leaves, cashew nuts, green chillies, tomato and grind it into a smooth paste.
Keep it aside for further use.

For Frying Paneer
In the same pan, add oil, ghee, once it's hot, add paneer and fry until golden brown.
Transfer it to a tray, add water and leave it aside to soak for 15-20 minutes.
Keep it aside for further use.

For Curd Mixture
In a bowl, add curd, degi red chili powder, turmeric powder, coriander powder and mix it well.
Keep it aside for further use.

For Chutney Wala Paneer
In a kadai or handi, add remaining excess oil, once it's hot, add a pinch of asafoetida, cloves, black peppercorns, green cardamom, fennel seeds, cumin seeds, dry fenugreek seeds, dry red chili and saute it well.
Add prepared curd mixture and cook it for 4-5 minutes on medium flames.
Add prepared chutney, salt to taste, sugar and cook it for a while.
Add black peppercorns, dry mango powder, fresh cream and mix it well.
Finish it with roasted nuts, fried paneer, fresh cream and give it a good mix.
Transfer it to a serving dish, garnish it with pomegranate pearls, fresh cream and coriander sprig.
Serve hot with roti or paratha.

For Roasting Nuts
In a pan, heat ghee, add raisins, cashew nuts and roast for 1-2 minutes until golden in color on medium flames.
Transfer it to a tray or bowl and keep it aside for further use.
