This dish can now be served at dinner parties without having to actually prep for it…BATATA VATANA PULAOIngredients 1½ cups Basmati rice, soaked for 15-20 minutes and drained1 medium potato (batata), peeled and cut into small pieces¼ cup green peas (vatana)2 -3 tablespoons oil 2-3 cloves2-3 black peppercorns ½ inch cinnamon ¼ teaspoon asafoetida (hing)½ teaspoon turmeric powder 2 medium onions, finely chopped1 medium tomato, finely chopped1 tablespoon chopped fresh coriander leaves + for garnishing1 tablespoon ginger-garlic paste Salt to taste2 tablespoons scraped fresh coconut + for garnishing1 tablespoon mixed masalaMethod1. Heat oil in a deep non-stick pan. Add cloves, black peppercorns, cinnamon, asafoetida, turmeric powder, onions, tomatoes, coriander leaves, drained potato, drained green peas and ginger-garlic paste, mix and cook for 1 minute.2. Add salt and mix. Add 2 tablespoons coconut and rice and mix. Add mixed masala, mix and cook for 1-2 minutes. 3. Add 3 cups water, mix, cover and cook till rice is done. 4.
