Ingredients quantity
Ladyfinger 1 cup
Oil for frying + 3 tbsp
Cumin seed 1 tsp
Garlic chopped 1 tsp
Ginger julienne 1 inch + 1/2 inch
Green chilli 3-4 nos +2 nos
Onion chopped 2 nos
Ginger garlic paste 1 tbsp
Tomato chopped 2 nos
Salt to taste
Red chilli powder 1 tsp
Coriander powder 1 tsp
Dry mango powder 1 tsp
Turmeric powder 1/4 tsp
Garam masala 1 tsp
Curd 1/4 tsp
Tomato cubes 2-3 nos
Coriander leaves 2 tbsp
Coriander sprig for garnish

Method :

1. Heat a oil in a kadhai, add lady finger allow it to fry for 2-3 mins.
2. Meanwhile in a plate place absorbent paper, and remove the fried ladyfinger and place it over the plate, keep it aside.
3. Now heat a wok, add oil, cumin seed, garlic, ginger julienne, green chilli slits allow it to splutter.
4. Now add onion and saute it well for 2 min on medium flame.
5. Now add ginger garlic paste mix and saute it well For 3-4 min on flow flame.
6. Now add tomatoes stir it well.
7. Now add salt mix it thoroughly.
8. Now add red chilli powder, coriander powder, dry mango powder, turmeric powder, garam masala, mix it nicely and saute it well for 2-3 mins on low flame.
9. Now add curd, mix it well and cook for 2-3 mins on low flame.
10. Now add tomato cubes, fried lady finger mix it well allow it to cook on low flame for 2 mins.
11. Now add coriander, ginger julienne, green chilli slits and mix it well and cook for 2 mins.
12. Transfer it in a serving bowl, garnish it with a coriander sprig.
13. Serve hot.
