BHUGA CHAWARIngredients1½ cups rice, washed and soaked2 tbsps ghee 4 green cardamoms5-6 cloves 1 inch cinnamon stick8-10 black peppercorns1 bay leaf2-3 slit green chillies2 medium onions, sliced1tsp garam masala powder 1tsp red chilli powderSalt to tasteBoondi raita to serveFresh coriander sprigs for garnishMethod1. Heat ghee in a deep non-stick pan and add green cardamoms, cloves, cinnamon, black peppercorns, bay leaf, green chillies and onions. Sauté for a minute. Cover and cook on medium heat till onions turn golden brown.2. Add garam masala powder, red chilli powder, salt and mix well. Add rice and 3 cups of water. Cover and cook on medium heat till rice is done.3.
