Perfect on a hot day, this dish is highly addictive especially with its cold, sweet, sour, spicy broth and extremely chewy noodles This is a must try for any Korean food and noodle lover Credits to @Maangchi for this awesome recipe! @jujumao BIBIM NAENGMYEONIngredients:Buckwheat noodles (Mul Naengmyeon)Broth:2 cups water per packet of broth (Partially frozen for 2 hrs)Spice sauce:1 korean pear, peeled and chopped1 onion leek, chopped4 tbsp gochugaru (red pepper flakes)1/4 cup gochujang1/4 cup rice vinegar4 tbsp sesame oil2 cloves garlic1 inch ginger2 small onion, peeled and chopped3 tbsp rice syrup3 tbsp soy sauce (or to taste)Toppings:1 japanese cucumber, julienned1 boiled eggtoasted sesame seedsProcedure:1. Mix together broth packets and water (1 broth packet to 2 cups water), place in an open container and set aside to partially freeze for about 2 hrs.2. In a food processor, mix together ingredients listed above under spice sauce. Process until mixture is thick. You may add more gochujang until desired consistency is reached.3. Boil noodles according to package directions ~ 5-8 mins. You want the noodles to still have a bite to it. Immediately wash under cold water until all the starch off the noodles is washed off and strain.4. Plate noodles in a bowl along with your broth slushy, spoon over your spicy sauce, top with cucumber, egg, toasted sesame seeds and enjoy!
