Black Beans Masala Karamani Masala Never Underestimate the Power of Good Food!

Black Beans are called Turtle Beans in English and Karuppu Karamani in Tamil.
Black beans have a satisfying texture and mildly sweet flavor. Theyre also incredibly healthy, providing multiple vital nutrients with minimal fat and sugar.

My current stay in Dallas facilitates my preparation of this scrumptious Black Beans Masala - I use canned Black Beans that are easily available, However, its very easy even if we had to boil them. All that is needed is soak the Black beans overnight in water. Drain and add 3 cups of water to 1 cup. Pressure cook till done adding saa add lt and turmeric.
Black Beans Masala
Ingredients:
Boiled Black beans - 1 cup
Onions - 1 medium
Green chillies - 1 or 2
Ginger - 1 inch piece
Tomato paste - cup or blend 6 or 7 tomatoes in mixi
Cumin seeds - 1 tsp
Turmeric powder- tsp
Coriander powder - 1 tbsp
Cumin powder - tbsp
Kashmiri chilli powder - 1 tsp
Kitchen king Masala or garam masala - 1 tbsp
Ghee - 1 tbsp
Oil - few tbsp
Salt to taste
Coriander leaves to garnish
Method:
Chop the onions, green chillies and ginger finely and keep aside
Keep ready half a cup of tomato paste or grind 6/7 tomatoes to a pulp
Heat few tbsp of oil and add the cumin seeds
Allow the Cumin seeds to turn colour and add the finely chopped onions, green chillies and ginger
Stir fry everything together till light golden in colour - can add a bit of salt to facilitate goldening
Now add tomato paste and start cooking everything together adding some water
Now add turmeric powder, coriander powder, cumin powder, kashmiri chilli powder and saute together over low flame
Allow everything cook together homogeneous till oil separates
Its now time to add the boiled Black beans
Add salt to taste and add boiling water to adjust consistency
Cover and cook over medium flame for 5 minutes
Meanwhile heat some ghee in a small pan
Add the Kitchen King Masala into it and switch off flane
Open the Black Beans Masala and add the sizzling tempering to it
Garnish with fresh coriander leaves
Close tightly everything for a few minutes for the aromas to infuse
Open and savour the delightful Black Beans Masala with rotis or naans or kulchas or parathas
