- Made some nourishing soup for dinner with black chicken, peach gum and white fungus. This soup is a good source of nature collagen as well as smoothing the lungs and intestinesIngredients 1 black chicken or 500g chicken portion 10 cluster or dried peach gum1/2 cluster of dried white funguscouple of red dates 1 dried scallop 2-3 dried figssome wolfberry, optionalMethod 1. Soak dried peach gum overnight with ample of water (it will expand a lot so use a bigger bowl), change the water a few times to remove the dirt 2. On the next day soak white fungus till soft, trim and set aside 3. Blanch chicken in boiling water for a 2 minutes, remove rinse with water and drain well4. Bring 1.2L of water to boil, add in all ingredients except peach gum and wolfberry 5. When mixture comes to boil, lower the heat and simmer for 30 minutes before adding in the soaked peach gum and continue to cook for another 15 minutes 6. Season with salt to taste and serve.Peach gum can be found is major Chinese medical hall. You can do sweet version by boiling a pot of water with pandan leaves then add dried longan, red dates, ginkgo nuts and peach gum.
