Carrot & Daikon Salad | Graces Japanese Cooking

Carrot and daikon. Two immune boosting power plants with an anti inflammatory ginger dressing in one bowl. Can’t go wrong. Both are known for their antibacterial and antioxidant properties which can clam inflammation and defend off disease causing bacteria. Daikon is also known for the digestive enzyme diastase which helps to breakdown food and support digestion! Start chopping! :)

Recipe (serves 3-4)

1/3 large daikon(Japanese radish), peeled and julienned
1/2 large carrot, julienned

Ginger Dressing
1 tablespoon soy sauce or tamari
1/2 tablespoon rice vinegar
1/2 teaspoon sesame oil
1 teaspoon honey or maple syrup
1 teaspoon grated ginger

1. Combine daikon and carrot in a large bowl. Add dressing and combine well.
2. Plate.
3. Top with ground sesame seeds.
