Recipe in English:

Ingredients:
-Aalo (Potatoes) large & peeled 750g
-Chilled water with ice cubes as required
-Makhan (Butter) 2 tbs
-Lal mirch powder (Red chilli powder) 1 & tsp or to taste
-Namak (Salt) 1 tsp or to taste
-Onion powder 1 tsp
-Lehsan powder (Garlic powder) 1 tsp
-Paprika powder tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Cornflour 2 tbs
-Maida (All-purpose flour) 2 tbs
-Cheddar cheese grated Cup
-Mozzarella cheese slices cut into triangles
-Cooking oil for frying

Directions:
-In a bowl,grate potatoes with the help of grater.
-Add chilled water with ice cubes,mix well & let it rest for 10-15 minutes.
-On a bowl,place muslin cloth,add grated potatoes & squeeze out excess water completely & set aside.
-In a wok,add butter & let it melt.
-Add grated & squeezed potatoes,mix well & cook on medium flame until completely dries up (5-6 minutes) & stir continuously.
-Let it cool.
-Add red chilli powder,salt,onion powder,garlic powder,paprika powder,black pepper powder,cornflour, all-purpose flour,cheddar cheese & mix until well combined.
-Grease hands with oil,take a small quantity of mixture (60g) & flat on your palm,place a triangle piece of mozzarella cheese slice and cover with remaining potato mixture,press gently & make a shape of triangle (makes 12) and freezer for 10 minutes.
-In a frying pan,heat cooking oil & shallow fry on medium flame from both sides until golden brown.
-Serve hash brown with egg,salad,bread slice & tea!

Ajza:

-Maida (All-purpose flour) 2 tbs
-Cheddar cheese grated Cup

-Bowl mein garter ki madad sa aalo ko grate ker lein.
-Chilled water with ice cubes dal ker mix karein aur 10-15 minutes kliya chor dein.
-Bowl mein muslin cloth rakh ker grated aalo dal dein aur ache tarhan squeeze ker ka excess water nikal lein & side per rakh dein.
-Karahi mein makhan dal ker melt ker lein.
-Grated & squeeze aalo dal ker ache tarhan mix karein aur darmiyani ancch per sukh janay tak paka lein (5-6 minutes) aur musalsal stir kertay rahein.
-Thanda ker lein.
-Lal mirch powder,namak,onion powder,lehsan powder,paprika powder,kali mirch powder,cornflour, maida aur cheddar cheese dal ker ache tarhan mix ker lein.
-Haathon ko oil sa grease karein,mixture ki small quantity (60g) lein aur hateli per flat ker lein,mozzarella cheese ka triangle piece rakh dein aur remaining aalo ka mixture sa cover ker lein,gently press karein aur triangle shape bana lein (makes 12) aur 10 minutes kliya freezer mein rakh dein.
-Frying pan mein cooking oil garam karein aur darmiyani ancch per dono sides sa golden brown hunay tak shallow fry ker lein.
-Hash brown ko anda,salad,bread slice aur chai ka saath serve karein!
