Cheesy Penne Pasta | Sanjeev Kapoor Khazana

Penne pasta cooked in overloaded cheese sauce along with fresh cut vegetables. This one is to die for !

CHEESY PENNE PASTA

Ingredients

2 cups boiled penne pasta
½ cup tomato concasse
1 cup cheese sauce
1 tablespoon olive oil
1 tablespoon chopped garlic
1 medium onion, finely chopped
Salt to taste
½ teaspoon paprika
Crushed black peppercorns to taste
½ teaspoon sugar
½ small yellow zucchini, sliced and halved
½ small green zucchini, sliced and halved
1 small red bell pepper, cut into triangles
5-6 fresh basil leaves + for garnishing
1 tablespoon parmesan cheese shavings + for garnishing

Method

1. Heat olive oil in a non-stick pan. Add garlic and onion and sauté well.
2. Add tomato concasse, mix and cook for 2 minutes. Add salt, paprika, crushed peppercorns and sugar, mix well and cook for a minute.
3. Add yellow and green zucchini and bell peppers and some water, mix and cook for 2 minutes. Add torn basil leaves and mix well.
4. Add cheese sauce and mix well. Add pasta and cheese shavings and mix well.
5. Garnish with some cheese shavings and basil leaves and serve hot with garlic bread.
