Chicken cooked creole style and served with rice

CHICKEN A LA CREOLE

Ingredients

2 boneless chicken breasts
½ inch raw turmeric piece
4 inch lemon grass root
1 inch ginger
5-6 garlic cloves
5-6 bimbli
3-4 green chillies
1 small onion, grated
Salt to taste
½ tsp black pepper powder
2 tbsps olive oil
2 cups cooked rice

Method

1. Grind together raw turmeric, lemon grass root, ginger, garlic, bimbli and green chillies to a fine paste. Put into a bowl, add grated onion and mix well.
2. Place chicken pieces in a plate, sprinkle some salt and black pepper powder over them.
3. Add the paste and mix well and set aside to marinate for 8 hours.
4. Heat 2 tbsps olive oil in a non-stick pan. Add the chicken pieces and cook turning sides, till both sides are equally done and crisp.
5. Place a bowlful of rice on a plate, place the chicken by its side. Place some salad (made with olive oil mixed with chopped green chillies, raw mango, onion, bimbli and salt) and serve hot.
