Corned Beef Hash

Ingredients

4 cups waxy variety potatoes cubed into 1/2-1/4 inch pieces
6 tablespoons salted butter
1 large yellow onion finely diced
1 tablespoon minced garlic
4 cups corned beef chopped into 1/2-1/4 inch cubes
Salt and pepper to taste
Parsley optional, for garnish


Instructions

1 Bring a pot of water to a boil and add the cubed potatoes. Cook for 7-8 minutes, then drain and pat dry.

2 In a large skillet, melt the butter over medium-high heat. Add the diced onion and cook for 5 minutes.

3 Add the minced garlic and saut for 1 more minute.

4 Add the potatoes and corned beef to the skillet and gently stir to combine.

5 Reduce the heat to medium and use a spatula to break up the hash into smaller pieces, if desired. Press the mixture down in the skillet to ensure even browning. Cook for 7-8 minutes without flipping.

6 Flip the hash and cook for another 7-8 minutes until it is browned to your liking.

7 Season with salt and pepper, to taste. Garnish with parsley, if desired.

8 Serve and enjoy!
