Cutting Chai Kulfi Recipe | Summer Special By Chef Ananya Banerjee

In India chai is a ritual in every family and mornings for most of us are incomplete without a sip chai. However hot the summer becomes chai lovers have their ways of enjoying their chai. To give you more option to enjoy your chai this summer, I bring you this easy recipe of cutting chai with a little twist to make it more enjoyable in the summer heat- an easy and delicious cutting chai kulfi recipe. Enjoy it with your usual biscuit or have it like a popsicle!

Ingredients for masala chai:
1 cups water
½ cup hot milk
2 tsp Assam tea
½ inch piece ginger root
2 whole green cardamom pods
½ inch piece cinnamon stick
4 black peppercorns
2 whole cloves

For the Kulfi:
2 cups Ready made Rabri
½ cup Condensed milk
2 tbs Chopped pistachios
½ tsp dried rose petals
Method:

To make the masala chai/ tea:
1. Crush ginger, cardamom, cinnamon, cloves and peppercorns. Boil water, milk .Add spices and tea leaves. Boil and simmer till the flavors infuse and a strong tea decoction is made. Strain and cool.
To make kulfi :
Add the condensed milk to the prepared tea. Add the rabdi , some dried rose petals and some pistachios to this mixture, mix well, and pour into cutting chai glass.
Put in the fridge overnight or for 8 hours before serving.
To easliy remove the kulfi from the moulds, run the mould under hot water for 20 secs, lightly tap and remove to a plate.
