Dal dhokli (Rajasthani: दाल ढोकली) (Gujarati: દાળ ઢોકળી), varan phal (Marathi: वरण फळ), or chakolya (Marathi: चकोल्या) is a Rajasthani, Gujarati and Maharashtrian dish made by boiling thick wheat flour noodles (dhokli or phal) in a pigeon pea stew (dal or varan). It is considered a comfort food.”

Ingredients for the dal:
Thuvar dal - 1 cup
Turmeric powder - 1/4 tsp
Method for the dal :
Pressure the Thuvar dal adding water - till soft
Keep the boiled dal aside

Ingredients for the Dhoklis:
Wheat flour - 1 cup
Gram flour/Besan - 1/4 cup
Ajwain - to taste
Kashmiri red chilli powder - to taste
Turmeric powder - to taste
Salt - to taste
Oil- 1 tbsp
Method for the Dhoklis:
Mix all ingredients and toss together
Make a soft dough adding some water
Allow the dhokli dough to rest for few minutes
Now divide into big roundels
Roll out into rotis
Cut them across into desires shapes and sizes
Keep them aside

Ingredients for the seasoning:
Ghee/oil - 1 tbsp
Mustard - 1/2 tsp
Jeera - 1/2 tsp
Green chillies - 1
Ginger - 1 inch
Dry red chillies - 2
Groundnuts - 1 handful
Rasam powder - 1 tsp
Kashmiri red chilli powder - 1/2 tsp
Asafoetida - to taste
Tomatoes - 6 medium
Salt to taste

Method to make Dal Dhoklis:
Chop green chillies; grate ginger and finely chop tomatoes
Heat ghee/oil in a thick and wide pan
Splutter mustard seeds and jeera
Add the grated ginger and chopped green chillies and sauté
Add the red chillies and stir
Now add the groundnuts and roast
Add asafoetida and red chillies
Now add rasam powder, turmeric powder, Kashmiri red chilli powder and sauté everything together over low flame
Quickly add the finely chopped tomatoes and stir together
When tomatoes are soft add the boiled dal
Cook together adjusting with Water and salt
When everything is boiling well add the cut Dhoklis one by one
Close and cook for few minutes
Garnish with lemon juice, coriander leaves and chopped onions

Enjoy the hot Dal Dhoklis with papads and pickles
