The ultimate comforting dish, this is the go to recipe if you’ve had a long day and don’t wish to put in efforts to cook. Gets done quickly and is filling too. DAL KHICHDIIngredients 1 cup kolam rice, soaked for 30 minutes1/2 cup split skinless green gram (dhuli moong dal), soaked for 30 minutes2 teaspoons ghee + for drizzling1 teaspoon cumin seed (jeera)½ teaspoon asafoetida (hing) 1 tablespoon chopped garlic1-2 green chillies, finely chopped1 medium onion, finely chopped1 medium tomato, finely chopped 1 teaspoon red chilli powder½ teaspoon turmeric powderSalt to taste1 tablespoon chopped fresh coriander leavesMethod1. Heat ghee to the pressure cooker. Add cumin seeds and when it changes colour, add asafoetida and stir. 2. Add garlic, ginger and green chillies stir for 1 minute. Add onion and stir till golden brown. Add tomato and stir till soft. Add salt and red chilli powder, Tata turmeric powder mix and cook for 1 minute. 3. Add 1 cup rice, dal and 4 cups water, mix well adjust the salt. cook for 3-4 whistles 4. Add coriander leaves and mix well, transfer the khichdi in a serving bowl.5. Drizzle some ghee on top and Sprinkle chopped coriander leaves.6. Serve hot with pickle and papad.
