Creamy Vegetable Handi

Ingredients for Blanched Veggies:
Water (for boiling) as required
Peas 1 cup
Carrot cubes 2 cups
Potato cubes 2 cups
French beans 2 cups
Chilled water (for soaking) as required

Ingredients for Creamy Vegetable Handi:
Oil 1/2 cup
Onion (chopped) 1 cup
Cumin seeds 1 tsp
Green chilies (chopped) 3-4
Ginger paste 1 tsp
Garlic paste 1 tsp
Tomato puree 1 cup
Yogurt 1/2 cup
Salt 1 tsp
Red chili powder 1 tbsp
Coriander powder 1 tbsp
Garam masala powder 1 tsp
Blanched veggies
Water 1 cup
Capsicum cubes 2 cups
Dried fenugreek 1 tsp
Cream 2 cups

Dried fenugreek 1 tsp
Green chilies sliced (for garnishing_
Ginger julienne (for garnishing)
Green coriander (for garnishing)

Directions for Blanched Veggies Preparation:
1. In a pot heat water and add carrot, boil for 2 mins. Now add French beans, potatoes and boil again for 2 mins. Add peas and boil for 2 mins again.
2. Now transfer the veggies to chilled water and soak for 2-3 seconds. Strain and set aside.
Directions for Creamy Vegetable Handi Preparation:
3. In a pot heat oil and add onion, cumin seeds, green chilies and cook for 1-2 mins.
4. Add ginger paste, garlic paste, and cook for a few seconds.
5. Now add tomato puree, yogurt and cook for 2-3 mins.
6. Add salt, red chili powder, coriander powder, garam masala powder and cook for 1-2 mins.
7. Now add blanched veggies and cook for 3-4 mins. Add water and cover and cook until veggies are fully done.
8. Add capsicum and cook for 1-2 mins. Add dried fenugreek, cream and cook for 2-3 mins.
9. Dish it out, garnish it with ginger, coriander and green chilies. Your Creamy Vegetable Handi is ready. Serve and enjoy.
