DHABA STYLE ALOO PALAKIngredients1 large bunch of spinach leaves2-3 medium potatoes, unpeeled and cut into quarters2 tsps oil1 tsp cumin seeds1-2 green chillies, chopped1 medium onion, chopped1 inch ginger, finely chopped1 tsp finely chopped garlic1 large tomato, finely choppedSalt to taste¼ tsp turmeric powder¾ tsp red chilli powder½ tsp cumin powder½ tsp coriander powder½ tsp Tata Sampann Garam MasalaGinger strips for garnishParantha to serveMethod1. Heat sufficient water in a deep pan, add spinach leaves and blanch for 1-2 minutes and drain them into ice cold water. Gently squeeze the excess water and set aside.2. Transfer the spinach into a blender jar, add ¼ cup water and blend to a fine paste. Set aside.3. Heat oil in a non-stick pan, add cumin seeds and let them change colour. Add green chillies, onion, ginger and garlic. Sauté till onion turns translucent. 4. Add tomato and mix well. Add potatoes and sauté. Add salt and sauté for 1 minute. Cover and cook till the potatoes are cooked completely.5. Add turmeric powder, red chilli powder, cumin powder and coriander powder. Add Tata Sampann Garam Masala and mix well.6. Add the prepared spinach paste, ½ cup water and mix well. Cover and cook for 4-5 minutes. 7. Adjust salt, mix and take the pan off the heat.
