Payatham Maav Laadu
Ingredients:
Mung dal or yellow split dal - 1 measure
Bengal gram dal - 1 handful
Powdered sugar - 2 measures
Cardamom powder - to taste
Cashews - as reqd
Raisins (optional)
Ghee - keep ready at least ¾ cup
Method:
Dry roast the mung dal and bengal gram dal till golden
When comes to room temperature, powder to a soft consistency
For 1 cup of dal powder, please remember to take 2 cups of powdered sugar
In some ghee, fry the dry fruits and keep aside
Heat ghee and keep ready
In a wide pan, add the dal powder and then the sugar powder
Add cardamom powder
Add the fried dry fruits and mix everything well together
Now add the hot ghee little by little
Mixing everything with ghee well, take a handful and make a laadu
Do the same with the entire mix
Mullu Thenkuzhal
Ingredients:
Raw rice - 4 cups
Mung dal - ½ cup
Bengal gram dal - ½ cup
White til - 1 tsp
Asaefotida - to taste
Butter - 2 tbsp or as reqd
Salt to taste
Oil for deep frying
Method:
Lightly toast the the dals
Grind the raw rice and dals together into a smooth powder
In a bowl, add a cup of the powder
To it add salt, asafoetida, white til and butter
Toss everything together well
Sprinkle water to make a smooth dough
Heat oil
Fill a Murukku press with the dough - use the star shape mold
Press Mullu Thenkuzhal into hot oil
Fry till golden on both sides
