Easy Stir-fry Broccoli Stems with Peanuts | The Chinese Cuisine

Broccoli stems are often neglected, but they are tasty when combined with crunchy peanuts in a stir-fry.

INGREDIENTS (4 servings):
- 7 broccoli stems
- 1/8 cup raw peanuts
- black pepper
- salt
- olive oil

DIRECTIONS:
1. peel and chop broccoli stems
2. mix in some salt and let it sit for 10 minutes
3. after 10 minutes use a large sieve to drain the water
4. add olive to pan on low heat
5. pan fry the peanuts in olive oil until they turn a golden brown
6. take out the peanuts and begin sauteing the broccoli stems
7. add in black pepper
8. add peanuts back in and some salt for taste
9. saute for a couple more minutes
10. serve and enjoy!
