EGG TAK-A-TAK

Ingredients

8 eggs, hardboiled and peeled
2-3 tablespoons oil
2 medium onions, finely chopped
1 tablespoon ginger-garlic paste
¼ teaspoon turmeric powder
½ teaspoon red chilli powder
1 green chilli, finely chopped
2 medium tomatoes, finely chopped
Salt to taste
2 tablespoons chopped fresh coriander leaves

Method

1. Heat oil in a non-stick pan.
2. Halve eggs.
3. Add onions to the pan and sauté till browned. Add ginger-garlic paste, turmeric powder, chilli powder and green chillies, mix, cover and cook for 1-2 minutes.
4. Add tomatoes, salt and 1½ tablespoons coriander leaves, mix, cover and cook till the tomato turns soft.
5. Bring the mixture in the centre and place the egg halves all around, yolk side down. Break the eggs with the help of 1-2 flat spoons making a sound (tak-a-tak) and cook for 1-2 minutes.
6. Add garam masala powder and remaining coriander leaves and mix well.
7. Serve hot with pav.
