Fried Noodle Bhel | Sanjeev Kapoor Khazana

Lip smacking crunchy bhel made using fried noodles. A must try !

FRIED NOODLE BHEL

Ingredients

200 grams noodles, boiled
Oil for deep-frying
2 medium potatoes, boiled, peeled and cut into small cubes
1 medium onion, finely chopped
½ cup bean sprouts
½ small raw mango, peeled and finely chopped
¼ cup peanuts, roasted and crushed
2-3 tablespoons green chutney
1 tablespoon Schezwan sauce
Salt to taste
3-4 tablespoons sweet tamarind chutney
1 tablespoon sliced spring onion greens + for garnishing

Method

1. Heat sufficient oil in a kadai. Deep-fry noodles till golden brown and crisp. Drain on absorbent paper.
2. Transfer fried noodles in a bowl and crush lightly. Add onions, bean sprouts, peanuts, mangoes, potato, green chutney, tamarind chutney, Schezwan sauce and salt and mix well. Add spring onion greens and mix well.
3. Garnish with some spring onion greens and serve immediately.
