A flavourful and lip-smacking pickle recipe straight from Goa. GOAN CHILLI PICKLEIngredients½ kg less spicy light green long chillies, washed, top separated, cut into 1 inch piecesSalt to taste6-7 whole dry red chillies, deseeded1 medium tamarind (imli) ¾ cup vinegar200 grams garlic cloves200 grams ginger, peeled, cut into 1 inch pieces¾ cup sesame (til) oil½ cup sugarMethod1. Soak dried red chillies and tamarind in vinegar for 2-3 hours.2. In a bowl, add the green chillies and add salt. Mix well. Keep aside.3. Transfer soaked mixture in blender along with the liquid and blend to a fine paste. Transfer in a bowl.4. Take green chillies mixture in a blender. Blend to a coarse paste. Transfer in another bowl.5. Take garlic cloves in a blender. Add salt and blend to a coarse paste. Transfer in a separate bowl.6. Chop the ginger and transfer in a blender. Blend to a coarse paste and add salt. Set aside.7. Heat sesame oil in a deep non-stick pan, add the blended green chilli paste and slightly saute for 1-2 minutes. Add garlic paste, ginger paste and salt. Sauté on medium heat for 9-10 minutes.8. Add sugar and mix well. Sauté for 2-3 minutes or till sugar dissolves.9. Add the red chilli, tamarind, vinegar paste in the pan. Sauté on medium heat for 10-15 minutes or till oil separates. Set aside to cool down.10.
