Golden Crisp Cheese Wafer/ Frico/ Easy Recipe with a Kid

When you make Frico, just be sure to incorporate at least one type of soft or creamy cheese such as mozzarella, swiss or even blue cheese!
Frico is an Italian cheese wafer. In this video we use reggiano parmigiano and white cheddar cheese, topped off with a little crushed up rice crispies and basil.
Add nuts and herbs. Let your imagination run wild!

Simply grate the cheeses and mix them evenly in a bowl. Take a pinch and make little mounds on a cooking sheet covered with parchment. Press down with the back of a spoon and add whatever toppings you choose. Bake in a 400 degree oven for about 6 minutes or when they just start to turn golden. Don't overcook 'cause Frico will taste burnt, YUCK!

Let them cool a for a few minutes, then set Frico on paper towels to absorb the oil.

Because Frico are pliable, you can also rest in egg cart containers or small cups and they will take on a fun shape acting as the perfect vehicle for other healthy and delicious toppings. Like tomatoes and herbs!
