Great Depression Pineapple Squares Recipe - Old Cookbook ShowYes depression era foods and depression era cooking was for the most part about thrift for a lot of people... it doesn't mean that people stopped eating, or stopped making foods that were fun or used exotic ingredients. I'm sure your grandparents walked uphill both ways in a snowstorm barefoot and hungry to get to school and home again everyday - but when they got home they probably had a slice of cake just like this. (they just never mention that part of the story)Pineapple Squares2 cups TOWN CRIER Flour4 teaspoons baking powder teaspoon salt2 tablespoons sugar cup shortening1 egg cup milk3 tablespoons sugar1 cup crushed pineapple cup chopped almondsSift the first four ingredients together. Cut in the shortening. Add the beaten egg and milk together. Add the crushed pineapple. Mix well and turn into a shallow, greased pan (about 9x9 inches). Sprinkle with the chopped nuts and the three tablespoons sugar mixed together. Bake in a hot oven (425 degrees F.) about 25 minutes.
