FRESH BROAD (FAVA) BEAN
FULL RECIPE
Ingredients
500 g fresh broad (fava) bean
1 large onion
2-3 sprigs of garlic
The juice of half a lemon
3 cups water
3 tbsp olive oil
1 tbsp flour
2 tsp salt
1 tsp sugar
5-6 sprigs of dill

Directions

PREPARATION
Set a large bowl
Squeeze half a lemon into the bowl
Add 3 cups of water and 1 tbsp flour then whisk the mixture to combine the ingredients with each other; Set aside the lemon-water-flour mixture

Wash the broad beans, sprigs of garlic, and dill
Using a knife, gently discard the strings and other hard pieces of the broad beans
Then cut the beans into 3 or 4 cm pieces
Place the fresh broad beans into the lemon-water-flour mixture and set aside

Peel and wash the onion; slice it into thin semi-circles. Then place the onions into a medium-sized pot
Chop the sprigs of garlic and set aside
Mince the sprigs of dill and set aside

COOKING
Set a medium heat and stir the onions with 3 tbsp of olive oil for 3 to 4 minutes
Strain the broad beans and add into the pot
Cook the broad beans and onions for 5 minutes while gently stirring from time to time
Then add the chopped garlic, 1 cups of lemon-water-flour mixture, 2 tsp of salt, and 1 tsp of sugar
Stir the ingredients well then cover with a lid and cook on a low heat for 30 to 35 minutes, until the broad beans become soft.
Then turn off the heat and sprinkle half of the minced dill.
Cover with a lid and rest for 10 to 15 minutes before serving
SERVING
This recipe offers a very light and delightful dish to reveal the original taste of fresh beans.
Its freshness improves if green dill is sprinkled over as garnish
Fresh broad beans that are cooked with olive oil can be served warm or cold
