How To Make Zucchini Muffins (Recipe)Check out www.raddishkids.com and get started with 3 great recipe guides a month, sent to your door.Prep Time: 20 minutesCook Time: 25 MinutesYield: 12 muffins4 zucchini3 cups flour2 tsp baking soda3 tsp cinnamon1/2 tsp salt2 eggs1 cup vegetable, grapeseed or sunflower seed oil1 1/2 cups sugar1 Tbsp vanillaPreheat oven to 350 degrees F. Line a muffin tin with paper cups or grease with cooking spray. Carefully grate zucchini on medium holes of a box grater. Set aside.Add flour to medium bowl.Add baking soda, salt, and cinnamon. Whisk until combined. Set aside.Crack eggs into a large bowl. Throw away shells and wash your hands. Whisk eggs until fluffy.Add oil, sugar, and vanilla. Whisk until fully combined.Add 3 cups of grated zucchini to egg mixture. (Save excess for another use.) Stir well.Slowly add flour mixture into egg mixture. Stir well. Use a large spoon or ice cream scoop to fill each muffin cup with batter. Fill to the top of each muffin cup.Bake muffins for 25-30 minutes.
