How To Make Homemade ZUCCHINI MUFFINS

How To Make Zucchini Muffins (Recipe)

Prep Time: 20 minutes
Cook Time: 25 Minutes
Yield: 12 muffins

4 zucchini
3 cups flour
2 tsp baking soda
3 tsp cinnamon
1/2 tsp salt
2 eggs
1 cup vegetable, grapeseed or sunflower seed oil
1 1/2 cups sugar
1 Tbsp vanilla

Preheat oven to 350 degrees F. Line a muffin tin with paper cups or grease with cooking spray.
Carefully grate zucchini on medium holes of a box grater. Set aside.
Add flour to medium bowl.
Add baking soda, salt, and cinnamon. Whisk until combined. Set aside.
Crack eggs into a large bowl. Throw away shells and wash your hands. Whisk eggs until fluffy.
Add oil, sugar, and vanilla. Whisk until fully combined.
Add 3 cups of grated zucchini to egg mixture. (Save excess for another use.) Stir well.
Slowly add flour mixture into egg mixture. Stir well.
Use a large spoon or ice cream scoop to fill each muffin cup with batter. Fill to the top of each muffin cup.
Bake muffins for 25-30 minutes.
