Make the tastiest Okongobong with Egusi! Serve with boiled plantains or yams.

I used dried Okongobong. If you have the fresh one, good for you. Use it. For my friends in the diaspora, you can slice fresh kale or collard greens and use them in place of the okongobong.

Ingredients For Okongobong With Egusi

6 cups dried okongobong
4 cups egusi
2 pounds beef
1 teaspoon baking soda
2 cups dried fish
1 medium onion, chopped
4 Maggi Cubes
Salt, to taste
1 cup oil
6-8 garlic cloves, peeled
2 inches ginger root, peeled
1 habanero pepper
cup dried crayfish
1 teaspoon ground white pepper
