How to Make Pumpkin Oatmeal Breakfast Cookies

This video will show how to make pumpkin oatmeal breakfast cookies. These breakfast oat cookies are a great way to use up ripe bananas, especially when you only have one or two which is not enough for banana bread. These are also great to put on a list of recipes for diabetics because there are no added sugars (as long as you don't add the optional maple syrup), just the natural sugars from the banana. It's also a cookie recipe without any processed foods and is a wonderful vegan cookie. While these are called breakfast cookies, they're not as much like oatmeal cookies and are really more like packaged snack bars in consistency. Ingredients (makes about 12 total):
2 very ripe bananas
3 Tablespoons pumpkin puree (NOT pumpkin pie filling - no sugar!!)
2 cups rolled oats
1 cup ground oats (use a blender to pulse whole oats into ground oats)
1 teaspoon pumpkin pie spice
1 teaspoon turmeric (ground)
1/4 teaspoon salt
1/4 cup raw pumpkin seeds
1/4 cup walnuts, raw
1/4 cup sugar free 100% cacao chips
1-2 tablespoons pure maple syrup (optional)

Directions
- preheat oven to 350F/175C
- mash bananas with a fork
- add 3T pumpkin puree
- grind 1c oats in a blender using pulse setting to achieve a powder consistency)
- add the 1c ground oats and 2c non-ground oats to your mixing bowl
- add the turmeric, pumpkin pie spice and salt
- roughly chop the pumpkin seeds and walnuts . pro tip - use a nut chopper!
- add all ingredients to bowl except chocolate chips and mix until everything is moistened.
- if it still looks dry, add more pumpkin puree or 1-2T pure maple syrup
- add the chocolate chips and fold into the batter
- line 2 baking trays with silicon mats or greased parchment paper
- take about 1/3c of the batter, form into a ball then flatten on tray. these cookies will not rise or spread, they'll pretty much be the shape you make. put 6 per tray
- if desired, decorate with pumpkin seeds to make the pumpkin's eyes, nose and smile
- put the trays in the preheated oven for 15-20 minutes until they are just barely starting to turn golden brown.
- let cool before enjoying!
