Make this recipe at home and share your experiences with us in the comments section below.Ingredients:-250g small brinjals1 tsp mustard seeds1/2 tsp asafoetida1 tsp garlic, grated1 onion, chopped3 medium sized potatoes, chopped1/2 a cup of waterMixture-2 cups of grated coconut1/2 a cup of coriander leaves, chopped1 tbsp peanuts, ground coarsely1/4 tsp turmeric powder1 tsp coriander & cumin seed powder1/2 tsp red chilli powder1/2 tsp amchur or raw mango powder1 tsp sugarSalt to taste OilMethod:-Cut the brinjals into half. Heat oil in a pan and add mustard seeds, asafoetida, grated garlic, onion and saute for a minute. Then add the brinjals, potatoes, salt, water and cover the pan with a lid and let it cook on low flame till the brinjals and potatoes are cooked.Dry Mixture:-In a bowl mix grated coconut, coriander leaves, peanuts, turmeric powder, coriander and cumin seed powder, red chilli powder, raw mango powder, sugar and salt.Add this mixture to the cooked brinjals and potatoes. Stir well and add water as required.Cover with the lid and simmer for a minute.
